| Brunello di Montalcino |
|
 |
The grapes are hand harvested and only the best berries are crushed to make these delicious wines. The wines are fermented and placed into Tonneaux barrels, which help to impart an elegance, grace and subtlety into each bottle of wine. These wines have such tremendous character and flavor profiles, one bottle just won’t be enough.
Aged 12 months in medium toasted, fine grain, French oak Tonneaux (5 Hl) and an additional 14 months in large Slovanian oak casks (48 Hl). The Brunello di Montalcino 2005 possesses strong structural properties fit for maturing and evolving over a period of time. This Brunello will grow finer with age although it is ready to drink upon release. Strawberry pie, with hints of cream on the nose and palate. Full body, with chewy tannins and plenty of fruit. Powerful and impressive for the vintage. |

Salice Salentino Rosso DOC Riserva
GRAPES: Negroamaro and Malvasia Nera
Wine obtained from selected Negroamaro and Malvasia Nera grapes picked by hand and selected again on a rotating wheel once reached the winery. The grapes are then destemmed and vinified according to some very new methods that guarantee a soft processing.
The maceration takes place in 500 hl horizontal rotating tanks. During this length of time (14 days), the wine completes its alcoholic fermentation at a temperature never exceeding 27° C and can be transferred into 225 liter French oak barrels where malolactic fermentation is performed. Then the wine is racked, blended and transferred again into barrels. After 9 months it is bottled and aged for 4 months before release. This wine is deep purple in color with dark plum and blackberry fruit flavors with a hint of vanilla. The richness of the fruit is balanced perfectly with spice and acidity and soft, smooth tannins. This wine pairs perfectly with roasts, game, cheese and braised meats. |
